Get to know Me and my Hubby

Thank you Jenn over at Books, Recipes and Lif. Oh my! for doing this! I decided it looked like fun, so I stole it :)


How long have you been together?


First started talking, late early April 2009, first meeting/date May 24, 2009.
Engaged July 30, 2010
Married March 19, 2011



How long did you know each other before you started dating?

haha we didn't really. Other than a month or so of taling on the phone and emailing we immediately became a couple when we met.
Who asked who out?

Hmmm...I guess he asked me out. More of a "Hey I can come see you in Midland" kind of thing...He definately made the first phone call!
(our second date, in Austin Texas...THe weekend I knew he was the one)

Did you go to the same school?
Nope!


Who is the most sensitive?

We both are in different ways.

What about pets?

Alli may is our baby girl!






Where do you eat out most as a couple?

Clear Springs, On the Border, Logans and Texas Roadhouse are probably our most frequented restaurants
But we also do Schlotskys, Subway and Pizza Hut a lot ;)


Where is the furthest you have traveled together as a couple?

We've all over Central Texas, Ft Davis, South of Houston, the mountains of NM.
But the furthest I guess was League City, TX, about a 9 1/2 hr drive for us for his friends wedding in October 2010

(on Galveston Beach, you can't really tell cause its dark out, but thats where we are :) )

Who has the craziest exes?

Ummm me...cause he doesnt have any exes :) but I have no contact with any of them so thats ok!



Who has the worst temper?

Probably him but it doesnt last long and its never directed at me. He's really pretty mushy! (dont tell him I said that hehe)

Who does the cooking?

Yeah that'd be me...he does tatertot casserole and scrambled eggs lol he tries though and its yumm!


Who is more social?

Thats definately me.


Who is the neat freak?

We're both slobs....lol except every now and then I get all overwhelmed and freak out about being messy and he has to clean up because Im panicky about it...its pretty ridiculous.

Who is the most stubborn?

Oh we are BOTH stubborn...He's more likely to admit when he's wrong a lot quicker than I am!


Who hogs the bed?

Oh we both do, but he more than I...I at least TRY to stay on my side! :)




Who wakes up earlier?

Depends on the day, his schedule fluctuates.  I get up about 6AM m-f, he sometimes has to get up at 5....

Where was your first date?

Clear SPrings for Dinner and then Putt Putt! THen back to my place and watched Indiana Jones lol

How long did it take to get serious?
It was immediately serious! I thought I knew I loved him on our first date. Our second date i knew for a fact. and we made it work even being 6 hours away!



Who eats more?

Him.

Who does the laundry?

We both do, but I try to do it more often lol He doesnt seperate it like I want him to! :) hehe But he always helps put it up cause that is the worst part for me!

Who drives when you are together?

We pretty much split the difference here...



Who is the first one to admit when they're wrong?

Him...Im a lot more stubborn in that way.

Who wears the pants in the relationship?

I think we both do?


Who eats more sweets?

OH he does if they're in the house for sure. I try not to keep them cause he'll make himself sick on them! :) I will too on the right day...
 

Another food blog!

Last night I made Cottage Pie (I'd normally call it shepherds pie but apprently its only SHepherd if it contains Lamb...mine did not contain lamb therefore it is COttage pie)
It was SO GOOD, and Luke loved it too...not TOO terribly unhealthy with all the veggies....I served it with mac & cheese so that was probably not the best idea nutritionally but tasted wonderful! Here is what I did

Ingrediants:
1 lb ground hamburger
1 pckg frozen mixed veggies (I used carrots, corn & peas)
1 chopped onion
1 chopped bell pepper
1 pckg brown gravy mix
splash of worstershire sauce
splash (probably 1/4 cup) ketchup
about 3/4 cup -1 1/2 cup beef broth
large helping of mashed potatoes (I used red potatoes...love them) - mash with butter, sourcream salt & pepper to taste
about 1 cup of shredded cheddar cheese

Boil the potatoes until soft, (8-10 minutes)
Meanwhile brown ground beef with onion and bell pepper until no longer pink
Thaw frozen veggies in the microwave then add to the meat stir
Add worstershire sauce & ketchup, stir
Add beef broth & brown gravy mix
Stir and simmer about 4 minutes

Mash potatoes with the butter & sour cream (I used my mixer to make the smooth) salt & pepper to taste

Pour meat mixture into greased casserole dish then carefully spoon mashed potatoes over the meat mixture and smooth out with fork (Make designs in the potatoes with peaks if you wish, the peaks will brown beautifully) then place in the oven at 350 for about 15 minutes
Remove and cover the top with shredded cheese bake another 10 minutes or until cheese is melty.

SO good! Serve with Mac& cheese, Green means or a hung of crusty bread!

Easter Weekend thoughts

I am sitting in my apartment with my husband on the couch watching basket ball on our new tv, our dog, Alli, is laying at my feet. Its been a wonderful day and I am just sitting here counting my blessings and basking in them.
I am probably the happiest I've ever been in my life, everything has come together, God has blessed me and He is smiling on us right now, and I am thrilled. I've married the man God placed on this earth for me to be with, he blesses my life every second of every day, I have the most incredible parents there are, they've done so much for me, and now for Luke and I, we're undeserving most of the time, but they just keep being wonderful and I could not feel more blessed, thankful and grateful for them. They have been my constant in my life for almost 28 years, they're wonderful and God has been so good to them. My family is awesome, we spent a wonderful Easter afternoon with all of my family, we love each other, laugh together, and just genuinely enjoy each other, and thats rare I think. I have incredible friends...WOW did the Lord know what he was doing when he placed people in my life for me to befriend.
Luke and I are in this little apartment and, sure, we'd love to be ina house but for now, this is just fine, we're finally getting it in order, we are finally feeling comfortable in this little space, I feel like we've finally made it "ours". Through the financial blessings we've received with the wedding and gifts we were able to not only take and enjoy a wonderful trip after the wedding but we've been able to get some new furniture for the apartment that we needed and in doing so, Luke was able to get his new tv :)
Luke and I are both blessed with employment. Though its not what either of us would like to do the rest of our lives, we do have goals for ourselves and our future family, we know how blessed we are to have jobs, and we are so grateful.
Most importantly we have GOD. He loves us, He smiles upon us, He listens and answers our prayers, and He forgives us when we do wrong. How great is that? No matter what I do, my Lord will forgive me because I believe in Him, have Him in my heart and he LOVES me. WOW!
I feel renewed, rejuvenated. Life is precious. I am so blessed. THe emptiness I once felt in my soul is full. the questions I once had about my future, they've changed. I feel like I've found my optimism again. I am happy.
God is good. I want to share that with everyone! Count your blessings. YES bad things happen, sadness and hurtful things are there, we all mess up, say and do the wrong things. But sit in the quiet for a minute, look around, think just for a second about how good you have it. See how blessed you are? See how Wonderful life can be? See how much GOD loves you and wants the best for you and wants to guide you down the right path? Isn't that wonderful?

Italian Nachos

Well my lovely husband came home with a MASSIVE bag of tortilla chips the other day, and so I've been thinking of ways we can utilize them in dinners, I dont want to waste them! SO last night I made my version of Italian Nachos (If you've ever eaten at Carinos and havent tried them, you need to...PRONTO!)

Here is what I did

Ingrediants:
Italian Sausage
pre-cooked grilled chicken (HEB brand, came in a small bag, pretty inexpensive)
1 Jar of 3 cheese alfredo sauce
1 Jar of chopped jalapeno
1 Roma tomato-thinly sliced
shredded Mozzerella cheese
Shredded Monterrey Jack cheese
Tortilla chips

Brown the italian sausage over medium heat & drain
lay chips out on cookie sheet
Warm pre-cooked chicken in microwave
spoon sausage over chips
same with chicken
place a small dollup of alfredo sauce over meat on each chip
Place a tomato slice over the sauce
Place small spoon ful of Jalapeno over tomato
cover with both types of cheese

Put in oven and watch closely until cheese is melted

I think it would also be yummy with chopped onion, banana peppers, you could add olives if you like them!

Wedding day!

March 19, 2011. The Day I married the love of my life, and a whole new chapter started in our lives together!


It was a wonderful weekend. Luke and I travelled to San Angelo on Thursday so that I could hang out with Ashley & Kendall and he could hang out with his guys. We had a great time!

Friday the BUSY started, Ashley and I got up and picked up the linens and opened the fort while Kendall went and got pizzas and stuff for us, and by noon everyone was there and working! We spent all day putting together, decorating etc…at 5:30 the rehearsal started…well it started later than that I was late and my parents were late but we started by 6 I think anyway. Everything just went by very fast and worked out wonderfully




After the rehearsal, Lukes mother hosted a wonderful mexican food Dinner, in which she decorated in Mardi Gras theme and surprised us with all different flavors of King Cake! It was delicious and so fun!!
 
Morning of the wedding was super hectic, get ready, run around, a few minor hiccups, more getting ready, sit in front of the fan (it was super HOT in that building) But at the end of the day we had our perfect wedding and everything was just GORGEOUS.
Thanks to all who helped set up and clean up (Kendall, Angie, Scott, Ash, Brandon, my family), Thank you to Both families for all your support, TO Mari THomas our awesome photographer, Tamara Hall who made my amazing and perfect Wedding cake, and all the musicians, Susan Owens, Jonathan Owens and Jeremy & Vallie Cameron...you all played a MAJOR role in making our day perfect!

Yeah Ok, so this is a really odd one...but here I go

I refuse to make my bed in the morning. My philosophy is this, I get up in the morning, go to work, come home, shower, go to bed. what is the point in making it for noone to see it? OK here is the kicker...I can't GO to bed in an un-made bed, SO i make the bed I have refused to make all day before I got to bed.
Im compulsive about it, EVERY night, I've even made Luke get OUT of bed so that I can make it...Crazy? yes...I know....so?! :)
